Crunchy Oven-Fried Chicken

For us in the US, this weekend will be the unofficial start of summer. Memorial Day weekend is the kickoff to the season when we open our pools, light the grills, and crack open some refreshing beverages. If you're planning on a cookout with family and friends, you've probably already got your menu planned out, or at least have a general idea of what will be served to your guests this weekend. For us, we won't have the grill going since I'm trying to use my oven a little more before the real summer heat kicks in and makes indoor cooking unbearable. But that doesn't mean that we won't be eating good! We usually do burgers or kebabs when we host, but I thought it would be nice to change things up this year and try this Crunchy Oven-Friend Chicken recipe that I grabbed off of Golden Blossom Honey's recipe index.

 
Gone are the days of the processed chicken coating that you can buy in a box at the supermarket. With a few simple ingredients that you probably already have on hand, you have a mixture that comes out way better than its boxed counterpart. I usually use egg and milk for a coating binder, but the mayo and honey worked out even better than expected. The chicken baked up tender and juicy, which is always pleasing to find when cooking with white meat since it can run dry at times. The nice thing about cookout food is that it is relatively inexpensive to feed the masses, and this recipe here is no exception. I know that we're all still feeling the economic pinch these days, so it's nice when you find an amazing recipe that isn't going to break the bank. So go ahead. Toss these ingredients in your cart, send out the invites this weekend, and let's get summer off to a great start!

Ingredients

2 whole chicken breasts (or pieces of your choice), skinned, boned and halved

1 cup pecans, finely chopped

1/4 cup breadcrumbs

2 teaspoons paprika

1 teaspoon salt

3/4 teaspoon pepper

1/3 cup mayonnaise

3 Tablespoons GOLDEN BLOSSOM HONEY

  1. Hope you will have a nice relaxing weekend, deary. I've sent the book to the publisher and just got a new one, so I will be working full speed as usual. But at least it is coldish and rainy today so I don't have to bother with the bloody heat.

  2. Oh my gosh, I forgot about the boxed coatings, lol!!! Those were my go-to's when I first got married a bazillion years ago. I remember being so proud that I'd found a way to make tastier chicken for my husband. I was a kid. Those were the days... until they weren't. ;) Happy Memorial Day weekend to you! I survived the school year.     And yes, this recipe is way better than boxed coating would be. :)

    1. It's funny to think back on our early years of learning to cook. I wouldn't be caught dead popping in a Banquet frozen dinner meal these days when we used to live by them LOL.
