Rustic Tomato and Bread Salad

Chaos. That seems to be the focus word for our household this year. I think the powers that be misheard me when I said I wanted it to be "organization" though. We currently have 4 rooms in our house under renovation and only halfway put back together, which sounds awful enough, but next week we start our work travels again so we're on a very tight schedule to wrap everything up asap. Married to someone with ADHD means everything gets done, but nothing gets done all at the same time. We're either on top of our game, or hot mess express. There's no middle ground in this family. Some days my daughter has to remind me to eat because it's go, go, go. Since I don't have time for gourmet cooking, this week's grocery order consisted of items to make quick work at mealtime. 20 minutes or less was what I was aiming for this week when it came to getting everyone fed, so I turned to recipes like this Rustic Tomato and Bread Salad from Golden Blossom Honey. 


Simple, filling, delicious are the words that perfectly describe this recipe. Best of all, it fit within my meal prep time constraints this week. This salad works equally well for a full lunch or as a side option to dinner. Or make it a full dinner with some sliced prosciutto, black or kalamata olives and mozzarella pearls mixed in for a heartier dish. I double the vinaigrette because I eat salads frequently and love using my own homemade dressing, and this one pairs with most salads wonderfully. I personally like a bit of crunch to the bread in this particular salad though, so I did not add the vinaigrette until I was ready to eat instead of waiting until the bread absorbed the liquid from the bowl. Again, that's just a personal preference, so you do what works for you and it will be fabulous in any case. 

Ingredients

4 ounces French or Italian bread, cut into 1/2-inch cubes (about 2 cups)

1/4 cup balsamic vinegar

2 tablespoons RAW GOLDEN BLOSSOM HONEY

1/4 teaspoon salt

1/8 teaspoon pepper

2 scallions, chopped

1 clove garlic, finely minced

1/2 cup olive oil

2 cups ripe tomatoes, coarsely chopped

1/4 cup fresh basil, chopped

  1. Why are you renovating rooms in the middle of winter? What are you doing with them?

    1. We needed new carpet for the basement and our stairs, so we had that installed. The rest of the house, where we are mostly, is all hardwood except our bedroom. We tore that out and put hardwood in there to match the rest of the upstairs. The guest bedroom is Allison's old room, so it's painted too much of a teen girl color. We've ripped out the trim and will replace it with fatter trim and will repaint to a more neutral color. Our mudroom has been in shambles for the better part of 2 years, so we're tearing out the outdated slate tile that's in there and putting up white ship lap to brighten the small space up. If we wait until summer, we'll be back at the flea market 2 days a week, then traveling again on the weekends, so there won't be time for home renovations come April. We are just ready to have this house complete instead of a million half finished projects we look at daily. Plus, we want to be ready when the market turns back around and interest rates go back to normal so we can immediately put the house up for sale instead of rushing to get projects done in order to list it. After we complete these last few indoor things, we'll put on a new roof, lay a new concrete driveway, then new siding and hopefully by then we can sell and move the hell out of here.

  2. We call that Panzanella salad. The first time I ever had it was in 2006 at an outdoor Italian restaurant in Sonoma. I fell in love with it and have been making it ever since! So good!

    1. I've never had it before, but it's become a favorite rather quickly. I need to start dining with you. You've known about this for 18 years and I'm just now stumbling on it. I'm so behind in the foodie game!

  7. Wow, you've got a lot going on. Nonetheless, we all need quick meals like this - often on a regular basis. I find it impossible to whip up anything complicated on a weeknight, for instance. So thanks for this recipe!

  8. This looks hearty good. I like a good vinaigrette. We're either completely organized or a hot mess too. Usually the former, but def. sometimes the latter. ;) I just call that life. :) Awesome that you're getting renovations done.
