Apple and Carrot Soup

The last two weeks have been go, go go, and I have not had much time for grocery shopping. My kitchen is about barren of food, so we've had to come up with some creative meals lately to get by until I have a chance to restock. This week it's been "what the heck do I have on hand and what can I use up and still have a satisfying meal?" kind of week. That usually means we're having a potluck stew or soup, but that's ok since some of the best recipes I've made are from using up what we already have on hand tossed into the pot. This week was no exception, and since I already had the ingredients, we ended up making a big batch of Apple and Carrot Soup from Golden Blossom Honey. 
 
 
Nothing makes me happier than finding pantry staple recipes that are super easy to make and delicious. And while my husband doesn't love soup like I do, he does like to have it occasionally. This recipe though, he mentioned several times over the course of the week how good he thought it tasted. Now, I do have to say that while I keep my version meat-free, he did cook up some sausage to add to his to make it a bit heartier, so that's definitely an option worth exploring for those of you who do like meaty soups. Also, I forgot to puree the ingredients like the recipe called for, but honestly I think I like chunky textured soup over a thin one anyway. Either way, I appreciated the simplicity of the recipe and am glad to have found another pantry staple meal to add to my collection.
 

Ingredients

2 Tablespoons butter or margarine
1 Tablespoon olive oil
3 medium onions, coarsely chopped
8 medium carrots, sliced
2 Granny Smith apples, peeled, cored, and sliced
2 teaspoons curry powder
6 1/2 cups chicken stock
2 whole cloves
2 Tablespoons GOLDEN BLOSSOM HONEY
3 teaspoons lemon juice
finely snipped chives for garnish
salt and pepper to taste

  2. I hadn't like soup either until I started cooking them myself LOL Which does not mean yours are bad, lol, of course, but maybe Jason would like really thick soups? I always make them super thick, sometimes I make them so that the noodles and veggies soak up all the water. I do love me carrots, in soup or not, I often just grate a carrot and a beet and eat it for breakfast with my seeds and bread. I wouldn't eat them with an apple, though, but you know me....
    OMG at first I thought those very dark buns were animal kidneys... I screamed....

    1. Jason does like thicker soup with less liquid. He's more of a chili or hearty stew kind of man. I'll send him your way and you can make him soup. He did say you were Facebook friends now. You should feel honored. He doesn't accept friend requests. I think there's like 5 people on his friends list. He's declined everyone else except the girls and my 2 best friends.

      Animal kidneys? You do have yourself a very active imagination LOL!

Hehehhe.... I don't expect he will be posting much there, right?

      At least he can now spy on us gossiping him on my profile in comments sections LOL

  3. I make Buddha Bowls with whatever’s on hand, usually leftover protein and then I search the freezer and canned goods for what complements it, like beans, veggies, couscous. Always turns out new and yummy!

  12. We do loves of pantry, potluck meals here! I'll usually grab everything and throw it in an omelet or scrambled egg for a quick meal. I'm not sure about the apples in a soup. Did the broth taste like apple juice?

    1. No, the broth did not taste like apple juice at all. It was covered by the chicken broth, curry and onions, which overpowered any apple flavoring.

  14. This sounds like it could be good. I'm just never had it. Travis just made chili in the instapot that I never use. It turned out good. It's the beans from the garden.
