Goat Cheese and Artichoke Spread

How many of you grab that huge bag of tortilla chips for $3 every time you shop Costco? It's one of those things that Jason can't walk by without tossing it into the cart. I get that it's dirt cheap, but there's only 3 of us in this house, so most of the bag goes stale before we eat it all. I know, a deal is a deal, but not if you're throwing so much out each month, right? One way to combat the waste though, is with a good dip. I used to love a good spinach dip, but my tummy can't handle spinach these days. But artichoke? Oh, yes! And that's why this Goat Cheese and Artichoke Spread from Golden Blossom Honey is my new favorite chip accompaniment. 


Melty cheese and artichokes hot out of the oven is pure bliss with every bite. Not only does this spread pair well with tortilla chips, it's great for crackers and bread too. Personally, I just like to take a big scoop of it and eat it right off the spoon, but you more civilized folk will probably enjoy it as an actual spread or dip. Not that we'll be having any parties any time soon, but this is a great appetizer, so save the recipe for when it's finally safe to get together with your peeps again. You'll be glad you did!

Ingredients
1 (14 ounce) can artichokes, drained and chopped
1/2 cup sour cream
1 Tablespoon GOLDEN BLOSSOM HONEY
1 (3.5 ounce) package Montrachet goat cheese
1/4 cup Parmesan cheese, grated
1 package cocktail size pumpernickel bread, lightly toasted
parsley for garnish

  1. All that lush greenery looks lovely on all that white and blue! The second photo is especially pretty. That being said, I'd never eat anything coming from goats LOL

  2. This does look yummy! I was always a fan of the typical spinach artichoke dip until I learned that it had cream cheese in it. Goat cheese is one of my favorites. :) I do agree that being wasteful isn't the best thing to be, especially not right now. We go to Costco and try to split large cases of fruits and veggies with my mom and grandparents. They aren't able to go to the store themselves so they appreciate our Costco run!

  5. I love artichoke spread but use Swiss cheese in mine. Goat cheese is a food I can't handle! I've never been to a Costco. I used to go to Sam's Club a decade or so ago, but the member fee got to be so high, I didn't think I was saving much money in the long run. Plus, it wasn't nearby.

  8. Every time I see your posts I think you surely have a knack for staging and photography. It's a gift. I don't say that regularly to anyone else. The dip looks good. My oldest grandbabe LOVES goat cheese. Her absolute favorite. :)

  9. Never tried artichoke, but I can still eat spinach. Yeah, so much in costco is huge and you tend to waste it. Not good to waste these days indeed. Only thing I have gotten there recently, before the covid crap, is kitty litter.
