Ham Sandwich with Coleslaw

Even though all of the elementary and middle school children get free meals here, many days my girls like to pack their own lunch because school lunch is "icky". There are only so many peanut butter and jelly's you can shove into a lunch sack before your efforts are noticed as "icky" as well. So, I did what I always do and hit up the recipe page on Golden Blossom Honey in a search to add some new ideas to our lunch menu for the new school year. There are a lot of great sandwich options there, but what caught my eye this week was this Ham Sandwich with Coleslaw

Ham Sandwich with Coleslaw

Usually the girls will put a slice of Swiss cheese on their ham sandwich, but I thought leaving the cheese off and topping it with a tangy slaw would really liven up lunch this week. I know coleslaw can be a love it or leave it kind of food, but thankfully my girls love it. The only downside is it is a bit messy, so I would suggest if you're sending this out the door with your kids, pack it into a plastic sandwich container instead of a zip top baggie. Include a fork too, so they can scoop up and enjoy the bits that may fall back into the container while they are eating. 

Ingredients
Coleslaw:
3 cups slaw mix or shredded cabbage
1/2 cup mayonnaise
2 tablespoons apple cider vinegar
2 tablespoons GOLDEN BLOSSOM RAW HONEY

12 slices ham
8 slices rye or pumpernickel bread

  1. Sure one way to keep things from getting icky. Doesn't hurt to switch it up. Yeah, blah to school lunches too, even if free.

    1. We used to have good lunches when I went, but politics made them not so good here. The pizza used to be the best!

  2. I don't eat it as cabbage is the enemy to my tummy, but my people eat cabbage salad almost every day as cabbage is the cheapest veggie. They cook everything with it, from cabbage paprikash and salads to macaroni with cabbage (when you just stir fry cabbage with a big of sugar and salt and mix it with macaroni, it is tres delish). It is especially cheap in winter. And, of course, every family, prepares sauerkraut for winter (at least one massive barrel per family) as we like to roast it in the oven shredded and our national dish is sarma (sauerkraut leaves stuffed with minced meat and cooked in water and thickened with paprika roux). Cabbage diet is also very popular (and stinky I hear).

    1. I do well with cabbage, but find that some greens like kale and romaine don't sit well in my belly. I do make it a point to eat sauerkraut almost every day since it's so beneficial to the gut. Cabbage is stinky though, so I only try to cook it when I can open the windows and air the house out so the smell doesn't linger for too long.

    2. You know what erases bad cooking smells amazingly? A bay leaf burnt on your stove or in an ashtray, you'd be surprised how is sanitizes the air and covers up all the stench from frying. It also kills germs in the air apparently. My mom uses it every day, works better than AirWick and Glade LOL

  3. Coleslaw probably leave it, but maybe I'd like it on a sandwich. I just don't like it alone. I do like cabbage plain or in soups though. I'd give this a try.

  5. I am not ready for school to start but this looks like a great lunch for any kid to bring. This is a great way to spruce up the doledrums of a ham sandwich.

  11. Ham sandwiches are my favorite. I love adding cheese, ranch, and veggies 90% of the time. I haven't thought about trying it with coleslaw though. Seems like it would make for an interesting combo. :)
