Cranberry Acorn Squash is a Classy Thanksgiving Side Dish




Is it too early to start thinking about the Thanksgiving menu yet? I believe that as soon as Christmas music starts playing on the radio 24/7, it's perfectly acceptable to start narrowing down the turkey day menu. Acorn and butternut squash have been dirt cheap this past month, and while I usually just drizzle it with a bit of honey before popping it in the oven, I found this Cranberry Acorn Squash recipe on Golden Blossom Honey last week and thought it sounded like a recipe that would look really classy on the Thanksgiving table.

Cranberry Acorn Squash

Not only does it look beautiful, adding a touch of elegance to your dinner table, it's delicious too. I never thought to combine two fall favorites into one recipe, but the cranberry pairs really well with the squash, making it one of my favorite holiday side dishes yet. It's also one of the easiest recipes I've ever made. Just 5 minutes of prep and into the oven it goes, so you  have plenty of time to work on the rest of the holiday cooking. This cranberry acorn squash has earned its place as a Thanksgiving staple every year from here on out.

Ingredients
2 large acorn squash, halved
8 ounces whole cranberry sauce
1 Tablespoon GOLDEN BLOSSOM HONEY
1/4 teaspoon allspice

    1. I feel sorry for you Canadians. It seems like there's such a long stretch between Halloween and Christmas. I'm glad that we have Thanksgiving to break up the wait. I do hope you had a good Thanksgiving last month though!

  3. Seems more like a desert than a meal, right? The colours are lovely indeed.
    We have the same colour of chrysanthemums in our yard too. Yesterday was All Saints Day here when all people take those flowers to cemeteries and light candles. This was probably the hottest one I remember. It is still around 25*C here every day! I've finally installed new metallic blinds over my roof balcony so I'm set for the rain season... and zombie apocalypse....

    1. With the spice added in, it's not overly sweet, so I wouldn't consider it a dessert. It's just a nice pairing for holiday meats and you can still enjoy a slice of pie at the end of the meal.

      It's freezing here. Send some of that heat our way. I like the idea of metal blinds. Does it get noisy when it's raining though?

    2. I've no idea, hasn't rained since yesterday when they installed them :) Previous ones were plastic and would bend and lose shape due to sun and I couldn't pull them up anymore because of that. We shall see how the metal ones survive winter, snow and storms.
      You should pop over for a holiday :) they say our whole November will be spring temps.

    3. You'll have to keep me updated on how well the blinds hold up by next summer. I do hate how the sun warps plastic.

      I'm tempted to spend November there. My eczema is starting to flare because of this dip in temperature. I'm going to have to make a doctors appointment for some cream so I can make it through winter without itching my skin down to the bone.

    4. try to find some home made natural calendula cream, dear, it cures all eczema and psoriasis too. But it needs to be natural.
