Comforting & Quick Vegetarian Chili

Don't you just love to have a hearty bowl of chili in the fall? I know I do! One thing that sucks about being a vegetarian is that it's really hard to find a restaurant that serves chili without meat. Jason and I were out and about not too long ago when I had a huge craving for a bowl. We looked high and low for a restaurant that served some without beef and it just wasn't happening for me that day. I always thought that chili needed to simmer on the store for a long time to marry all of the flavors together, so I didn't bother going home to make my own since it was so late in the day. My sad little tummy had to settle for tacos instead. I was browsing Golden Blossom Honey's recipes last week and saw this recipe for Vegetarian Chili. What really drew me to the recipe, aside from it being meatless, was the word "quick" in the description. 

Vegetarian Chili

With prep of the vegetables, from start to finish I had this chili ladled into bowls in under 45 minutes. Instead of beef you use bulghur, which gives it a great texture. We usually top with sour cream, but this recipe call for plain yogurt which I like because it still gives it that zingy flavor without the additional fat of sour cream.

Vegetarian Chili

Serve it along some honey topped cornbread, and you have the most perfect vegetarian comfort meal!

Ingredients
1 Tablespoon vegetable oil
3 medium onions, chopped
3 carrots, chopped
2 Tablespoons jalapeno peppers, minced (optional)
2 cloves garlic, minced
2 Tablespoons chili powder
1 1/2 teaspoons ground cumin
2 (28 ounce) cans whole tomatoes, chopped, with their juice
2 1/2 Tablespoons GOLDEN BLOSSOM HONEY
3 (15 ounce) cans red kidney beans, drained and rinsed well
2/3 cup bulghur
3/4 cup plain non-fat yogurt
1/2 cup scallions, chopped
1/4 cup fresh parsley, chopped

    Looks lovely and you did lovely photos!
    I don't make chili, but I do make paprikash for moiself sometimes and I usually make a double dose so that I have some for supper as well as I like it cold too.

    1. Actually, I put more cumin in it than that, then added in paprika after I took the photos. I love that spice. Add lots to my Mexican dishes too :P
      I love making double batches of comfort foods, though I hardly eat them cold. I’m always freezing, so I need me hot teas, soups, and stews to warm me bones.

  3. I have a friend who vegan for his health, but he's been seriously regretting his decision lately. I think this might help him stay on the bandwagon.

    1. I am vegetarian for my health too, and the first year was real hard for me to adjust. I am going on 3 years now and can honestly say I don't miss meat anymore.

  4. Other than the flavor, what's really selling me on this is the ease. I do not have time to spend hours and hours in the kitchen. I love it!

  5. Love a good bowl of chili - my favorite is actually taco soup. Top it with sour cream, cheese and fritos! Yum!!! We're having a pot-luck chili day on Halloween at work, so that's what I'm bringing in for my share. :)

    1. Yes, we both have a love for Taco Soup! I haven't had any in quite a while. I think I need to remedy that and make some real soon!

  7. We make a vegetarian chili with tofu and i have never tried bulgher or even heard of it. I love some of your ideas for your version and will try to make it soon.

  8. I like the idea of using yogurt instead of sour cream. I haven't tried bulgher. I do love vegetarian chili though, and it really is hard to find in a restaurant.

    1. Jason has been replacing sour cream with yogurt for a while now and it's honestly not much of a difference taste wise. I really liked it in my chili!

  13. I loved your vegetarian chili recipe. We had it last Saturday and my family loved it. It has very delicious and easy to prepare. The word "quick" also got my attention -- and viola! easy to prepare meal. Thanks for sharing!
