Back To School Energy Bars

Can you believe that it's already almost time for back to school? We're just 3 weeks away until my girls go back and I am not ready. Where did the summer go!? Now that all of the summer stuff has been clearanced out to make room for the notebooks and glue, I need to dig in and get myself mentally prepared for the new school year. Mariah will be back at Purdue for her sophomore year and Allison is moving up to high school. Yikes! Not only is summer flying by, but so are my kid's childhoods. *sob* While they may be growing quicker than I'd like, they are never too old for homemade goodies. One thing that my kids love grabbing on their way out the door in the mornings are homemade granola bars. I found this Energy Bar recipe on Golden Blossom Honey earlier this summer and after looking through the ingredients, knew it was one that needed to be added to our school breakfast/snacking recipe catalogue. 

Energy Bars

Allison isn't a morning person, so these will be perfect for those days she just wants a grab and go kind of breakfast. It's packed with energy boosting ingredients that will help her power through until lunch. The recipe calls for harvest medley, so I bought a bag of mixed seeds and fruits containing pumpkin and sunflower seeds, dried cranberries, raisins, and goji berries to give it an extra boost of nutritional goodness. You can find something similar where your grocer keeps their dried fruits.


Ingredients
2 eggs
1/3 cup GOLDEN BLOSSOM HONEY
1/4 cup butter, melted
1/4 cup creamy peanut butter
4 cups raisin bran cereal
3/4 cup old-fashioned oats
1/2 cup flour
1 teaspoon cinnamon
1/2 cup harvest medley chopped dried fruit, (found in supermarket with dried fruits)
