Chicken with Tomato Corn Salsa

I am excited to announce that my garden veggies are finally ready for me to start picking! Woo-Hoo! It seemed like they took a lot longer to come in this year, and even though Allison hardly tended to her container gardens, I think her veggie bounty was better than mine this year. She got twice as many peppers as I did, so I think next year I am putting her in charge of the pepper section of my garden too. Now that we have lots of fresh vegetables, it's time to put them to good use. 

Chicken is a family favorite for dinner, but there are only so many ways you can prepare it before it becomes a tired dinner item. When I came upon this Chicken with Tomato Corn Salsa recipe over at Golden Blossom Honey, I knew it would be a great way to put our fresh picked veggies to good use and revive a dinner staple.


I ended up making extra of the salsa so I could enjoy it with some tortilla chips. The salsa is great for dinner or snacking. Gotta love a recipe that you can use multiple ways!

Ingredients
Tomato Corn Salsa:
1 cup cherry tomatoes cut in half
1/2 cup frozen corn, thawed
1 scallion, thinly sliced
1 tablespoon lemon juice
1 tablespoon finely chopped jalapeno pepper
1/4 teaspoon cumin
salt and pepper to taste
Chicken:
2 whole chicken breasts, boned, skinned and halved
2 tablespoons GOLDEN BLOSSOM HONEY
1 tablespoon finely chopped jalapeno pepper
1 clove garlic, finely chopped
1 tablespoon GOLDEN BLOSSOM HONEY MUSTARD
1 egg
3/4 cup dry bread crumbs, unseasoned
1/4 cup flour
2 tablespoons olive oil

  1. Are you allowed to eat cumin? I don't like its taste it's so nasty :) Did you plant cherry tomatoes or the regular ones? I wish I had the yellow ones, I lurv those!

    1. This year I did cherry tomatoes, red and green peppers, banana peppers, jalapeƱo, strawberries, parsley, basil, chives, and the zucchini that flopped.
      I can do all spices in small doses. I don't normally like cumin either, but the lime juice really toned down the bold notes in the spice, surprising me with how much I liked the combo of flavors.

    2. you could try spinach and chard next year too, I know they will grow pretty much everywhere and don't require much space and you can use them even when they grow very small.

    1. I wish I would have grown bigger tomatoes for canning this year. I just stuck with the small cherry ones. Hope you had a bountiful tomato harvest this year!
