What's For Lunch? Chicken Salad!

For years, Jason would go out to eat to lunch every single day. Not only was it costly, it really wasn't very healthy either. But, for the past year he has been taking his lunch to work most days, with the occasional dining with co-workers here and there. Peanut butter and jelly, or even lunch meat sandwiches can get boring after a while. I try to plan dinners ahead so I can make extra for his lunch the next morning, but twice a week I get home after 8pm and really don't feel like putting a lot of effort into making a large meal. I found this Chicken Salad recipe on Golden Blossom Honey not too long ago, and think it makes a fabulous make ahead recipe for days when pbj won't cut it and I didn't make enough for leftovers, or don't feel like cooking late at night. 

Chicken Salad

I can make this and store it in an air-tight container for several days, so it's perfect for when I am slacking in the kitchen. The dried cranberries give it a yummy sweetness, and the walnuts a delightful crunch. I love all the different textures in this chicken salad!

Ingredients
Dressing:
1/2 cup mayonnaise
2 tablespoons apple cider vinegar
2 tablespoons GOLDEN BLOSSOM HONEY
1 tablespoon Dijon mustard
1/8 cup scallions, chopped
1/2 teaspoon dried dill
1/4 cup craisins or dried cherries
1/4 cup walnuts, toasted and chopped
2 cups cooked chicken, cubed (use a rotisserie chicken from the market)

  1. Cranberries and walnuts are always a good match. I'm headed over to see what else there is on that site. I need to find some good appetizers for the weekend.

    1. I've been on a real cranberry kick lately, and I do love walnuts. I was just contemplating concocting a cranberry walnut breakfast smoothie because I love that combo so much!

  2. Mayo makes everything edible :) You eat dindins very late? I usually don't eat after 6PM but I don't have kids and husband :) In my country the main meal is the midday lunch since we usually work in shifts not till 5PM and dinner is something light, usually a sammich or something like that. Lunch is always a cooked meal in my country, dindins something dry and cold.

    1. That's interesting, Dezzy! I usually try to have dinner on the table by 6pm, since Jason usually gets home around then. Only twice a week do we eat so late. I can't imagine having a heavy lunch. I think I would feel unproductive afterwards. Breakfast and lunch for me usually consist of smoothies, yogurts and fruits. All very light eats. Then dinner is a bit heavier. I think I'd wake up with hunger pains if I ate so light at dinnertime.

    2. You would not dear, since you would take enough food for lunch. Most doctors recommend it, since that way you have time during the day to process and digest the heaviest meal, while with heavy dindins you go to bed with belly full and it goes into fat :) But I know that this is impractical in USA because of your working times. Tis also probably one of the reasons why so many Americans are overweight :(

    3. I know, our work schedules are not to be envied, that's for sure. I remember Oprah talking about not having a single bite to eat after 8pm, not even a single grape, when she is on one of her weight loss journeys. I am sure our work hours definitely contribute to our obesity problem, in addition to consuming processed and prepackaged foods too much :(
