Clean Eating Greek Cucumber Salad

Happy New Year! Sorry, I haven't been online much this week. Next week isn't going to be much better, either. I've been super busy doing my twice yearly deep cleaning of the house, and we are gearing up to repaint Allison's room over the next few days. I like to go into the new year with the feeling that everything is clean, organized, and in its place. A fresh start for a fresh year. I don't make resolutions, but I do have a few goals that I'm working towards right now, and I do hope to continue working on them throughout the year. One of my goals is to cut down on processed foods and eat more clean. Honestly, I'll probably never be a full clean eater, I mean, Lindt chocolate! Who doesn't love that!? But, cutting some of the junk out here and there surely adds up. I've been making a lot of foods from scratch lately, and one of my more recent food from scratch loves is this Greek Cucumber Salad dressing from Golden Blossom Honey. 


Made with organic veggies and super tasty, it gives my salads a nice kick of flavor. I make this one in big batches so I have some on hand for the salads I like to eat daily. 

Ingredients
1 head romaine lettuce or fresh spinach, rinsed, drained, broken into bite-size pieces

Dressing:
1 garlic clove, chopped
1/4 teaspoon salt
1 cucumber, peeled, seeded and chopped
1/4 cup (4 ounces) feta cheese, crumbled
1/2 cup plain nonfat yogurt
1 Tablespoon GOLDEN BLOSSOM HONEY
black pepper, to taste

  6. I think my mom and sister would love that recipe. I don't like cucumbers so it isn't for me. My real resolution is to just be healthier in general this year - more exercise and home cooking, less fast food. But I just made a joking resolution to my dad to finally try a Jack in the Box taco this year....I've never had one in my 32 years of life!

    1. I have never had them either, but I think they are a west coast chain, no? We are thinking about making a trip to Cali this summer, and if we do, they are definitely going on the eats list!

  10. I just ran out of dressing. I was going to get more, but forgot. Really dressing is so easy to make. I just hate that I make too much. It goes bad faster than the store bought kind. I should just make 1/2 a recipe. This sounds good!
