5 Days of Holiday Goodies! Day 3~ Oatmeal Raisin Cookies

Soft Batch Chocolate Chip Cookies used to be my favorite cookie, with peanut butter falling a close second. Then I made these oatmeal raisin cookies, which are now my current favorite! Whenever we have a job that needs to be done around the house, I pay my father in law in cookies. And these oatmeal raisin cookies are always his first request.

Oatmeal Raisin Cookies


Ingredients:

1 cup butter, softened. Real butter- not a spread
1 cup packed, light brown sugar
1/2 cup white sugar
2 eggs
2 tsp vanilla extract
1 1/4 cup all purpose flour
1/2 tsp bakng soda
1 tsp salt
3 cups quick cooking oats
1 cup chopped walnuts
1 cup baking raisins

Directions:

Preheat oven to 325 degrees F
In a large bowl, cream together the butter, brown sugar, and white sugar until smooth. Beat in eggs one at a time, then sir in vanilla. Combine the flour, baking soda, and salt. Stir into the creamed mixture until just blended. Mix in the quick oats, walnuts and raisings. Drop by heaping spoonfuls onto ungreased baking sheets.
Bake for 12 minutes in preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

    1. Oh no, they aren't crunchy. I am not a fan of crunchy cookies. These are super soft and moist :)

  8. These cookies would be perfect for me Theresa! I have been enjoying a lot of oats and have raisins from time to time. A wonderful combination for sure.
