Muffins With A Cherry On Top

I planted a cherry tree last summer and got excited when I saw a few little cherries starting to sprout off of it. My excitement turned out to be short lived since the few that popped up were quickly gobbled up by the birds. I also planted a few blueberry bushes and will say that I fared better there, but not by much, netting myself a grand total of 4 blueberries between two bushes. Shortly put, I'm not having much luck with my garden this year. While I won't be making any fruit pies with my garden haul any time soon, I did pull out this Cherry Muffin recipe from Golden Blossom Honey earlier this week to serve with dinner. Since it called for dried cherries instead of the fresh variety, I knew it was a doable recipe for me since I always have dried cherries and blueberries on hand.

Cherry Muffins

With 4th of July less than a week away, I thought this might also make a great addition to your festive picnic spread. When I think of fruits for Independence Day, cherries are always at the top of my list. You can use any of the dried cherries from your grocer's baking aisle, but, and I know I've said it before, I love using the Michigan Cherries from Costco's baking aisle. They are sweet and plump and don't dry out in your baked goods. Let's chuck the cherry pie this year and whip up some muffins instead. Or, serve both. I'm one who thinks you can never have too many cherry dishes on the table anyway. 

Ingredients
1/2 cup GOLDEN BLOSSOM HONEY
1/3 cup melted butter
2 eggs
1 teaspoon lemon zest
1/2 teaspoon vanilla extract
1/2 cup boiling water
1 cup dried cherries or dried blueberries
2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt

  2. Oh, so that is why that little birdie died so suddenly........ just joking, I know you fought for its life bravely!

    Can't remember when was the last time I had a cherry... we never seem to have them around... they appear for just a week or two, terribly expensive and unripe.... and then nothing till next year....

    2. My country is in top five biggest world producers of a large variety of fruit, from your favourite berries, to apples, pears, peaches, plums, cherries, quinces. But they all go to export, sadly. Apples are currently more expensive than bananas here, because it is not their season and they probably sold everything to foreign countries.

  12. Muffins are always a favorite for me. I don't care what fruit is in them, I love 'em. These look delish! Sounds like the birds spread the word that you decided to open a snack stop for them this year. ;) Sorry your fruit didn't fare well.

    Muffins are my weakness. I try to eat less carbs, because I don't want my blood sugar to spike but I just can't say no to muffins! OMG, these ones you made really made me crave for them!

  15. I understand how you feel about those birds getting to the fruit. I had the same experience too. Bird feeders did the trick, so the next summer I am looking forward to a full harvest from my fruit bearing trees. Thanks for sharing your muffin recipe.   18. I'd love to have my own garden of fresh fruits and veg to pick off from too but unfortunately I don't have green fingers, not to mention our weather doesn't suit a lot of plants :(
