Colorful Julienne Vegetables in Honey Vinaigrette

Did everyone have a nice Easter? Ours was great. Mariah was able to come up from college to spend the weekend. When the girls woke up they were pretty excited to see that the "Easter Bunny" still brought them a basket. That excitement didn't last when they realized the bunny only left them one lollipop in each. I guess that crazy rabbit had to get his April Fool's pranks in. I also pulled my own prank on the family. We always take peanut butter balls to dinner for the extended family to enjoy. Instead of peanut butter balls, I dipped Brussels sprouts  in chocolate and passed them off as candy coated treats. We were able to fool about 4 people before everyone else caught on. Overall, we had a great day of harmless pranks, lots of laughs, and best of all, good food. 

Speaking of food, this year I added this colorful Julienne Vegetables in Honey Vinaigrette from Golden Blossom Honey to the Easter spread. 

Julienne Vegetables

This recipe is not only colorful, is has a wonderful mix of flavors and textures. Sweet and tangy with a nice crunch, I could have eaten the whole plate myself! Even though I made this for Easter, I am thinking it will make an awesome summertime BBQ, picnic, or potluck dish as well. Ingredients
Vinaigrette:1/4 cup raw sunflower seeds, toasted
3 tablespoons rice vinegar
1 tablespoon GOLDEN BLOSSOM HONEY MUSTARD
1 tablespoon olive oil
Salad:
3 medium carrots, cut into matchsticks strips
1/4 pound snow peas, trimmed and cut into matchstick strips
1 red bell pepper, cut into matchstick strips

      I do love blue dishes as of late. I forgot I had this one tucked away until I started rummaging around for a different dish I had planned to use.

  5. Honey is a perfect compliment to any dish, in my opinion. I've been trying to eat more veggies, and I think these are going to taste amazing.

  6. I love a good vegetarian recipe. Those carrots, peppers and snow peas make a great base for the dish and I have to try that honey mustard.

  8. My husband and I agreed that we would be having more vegetables in our meals. I think your salad looks great and I love sunflower seeds so this recipe really appeals to me. Thanks for sharing!

  9. LOL to the Brussels Sprouts. I told my youngest there was a centipede that was poisonous right next to his head. I told him not to move because they could jump 12 ft in the air. It was really ridiculous of me, but it was hilarious. Of course he spent the rest of the day attempting to get me back. ;)

    I like that your recipe has sunflower seeds in it. I agree, this is a good one to pin too, for summer.

  12. I love a mix of veggies. Lately we have had salads to make up for all the crappy food we ate over Easter. You know my pranks. I also thought about getting a donut box, and filling it with veggies. But...we have a traditional coffee cake that we eat, so that wouldn't of worked.
