No-Bake Dulce de Leche Pie

I like pie. A whole lot. If I had to pick only one sweet to eat for the rest of my life, it would be pie, hands down. If there's a party going on, I would definitely prefer to have pie on the table over cake. One of Jason's friends is a whiz in the kitchen and I am lucky enough to be on the receiving end of many of the treats he makes. Jason brought home a few slices of cake and pie for me this month, so I thought I'd return the favor and whip up something he could pass back along to his friend. Since we both have a love of cheesecake, I figured it would be nice to try out a new recipe for Dulce de Leche Pie. Since it's made with cream cheese and whipped cream, I knew it was going to be one that we would both enjoy.

I found this recipe in the cookbook No-Bake Treats by Julianne Bayer (<- affiliate link) and have been saving it for Cinco de Mayo, but it sounded so good, I decided to make one a little early. You know, for testing purposes ;) And to send a slice to the friend, of course. 

What's really great about this Dulce de Leche Pie is that it is no bake! If you are looking for a last minute Cinco de Mayo recipe or a party pie recipe that you don't have to spend all day in front of the stove to prepare, this one has you covered.

No Bake Dulce de Leche Pie

No-Bake Dulce de Leche Pie

INGREDIENTS:

For the Crust
  • 1 14 ounce package chocolate sandwich cookies (Oreos)
  • 8 tbsp unsalted butter
For the Filling
  • 10 ounces white chocolate (I used Nestle chips)
  • 1¼ cups plus 5 tbsp heavy whipping cream, divided
  • 1 cup powdered sugar
  • 8 ounces cream cheese, softened
  • ¼ cup dulce de leche
For the Topping
  • ¾ cup heavy whipping cream
  • ½ cup powdered sugar
  • sliced strawberries and caramel sundae sauce for garnish (optional)

INSTRUCTIONS:

  1. Place a mixing bowl and whisk attachment into the freezer while you prepare the crust. Allow to freeze 10 to 15 minutes.
  2. Lightly spray the edges of a 9 inch spring form pan with cooking spray. Pulse the cookies into fine crumbs in a food processor (or use the old ziploc and rolling pin smash method). In a microwave safe bowl, melt the butter 45-60 seconds. In a separate medium sized bowl, mix the butter into the cookie crumbs until all crumbs are moist. Pour the crumbs into the prepared spring form pan, firmly pressing onto the bottom and up the sides of the pan to make a thick crust.
  3. Place the chocolate and 5 tablespoons of heavy whipping cream into a heavy bottom saucepan. Melt over low heat, continuously stirring until ingredients are incorporated and smooth. Set aside to cool for 15 minutes.
  4. Pour the remaining 1¼ cups heavy whipping cream into the chilled mixing bowl and beat on medium-high speed until bubbly. Gradually add powdered sugar and beat until stiff peaks form.
  5. In a separate bowl, beat the cream cheese on medium-high speed until light and fluffy (2-3 minutes) scraping down the sides of the bowl occasionally. Slowly mix in the melted chocolate and beat until combined, scraping down the sides of the bowl as necessary.
  6. Microwave the dulce de leche for 20-30 seconds. Pour the dulce de leche into the cream cheese and chocolate mixture and beat until all of the ingredients are combined well to form a mousse. Fold in the whipped cream mixture and stir until well combined. Pour the filling into the prepared pie crust. Cover and refrigerate 4-6 hours, until the filling is firm.
  7. If desired, make another batch of the whipped cream as directed above. I also mixed in 3 tablespoons of dulce de leche for more flavor. Pipe around decorative edges and garish with caramel sauce and strawberries if desired. Serve chilled.

The chocolatey crust and rich, creamy caramel flavor will have you coming back for seconds. Have you heard that quote, "Nobody eats faster than a mom who doesn't want to share?" After making this pie, I think I broke record speeds in the eating department.

    It's two nonworking MayDay holiday here, everybody is out grilling animal carcasses and things. Neighbours think their yard is disco club. I think I will sleep it all of! If I find me sleeping pills.. or a sledgehammer..

    1. You sound like Jason- "Why does it have such a stupid, fancy name?" lol Dulce de Leche is condensed milk that's been boiled to a caramel consistency. Very sweet and tasty!

      Sorry about the rowdy neighbors :( We'll get that around here in July for Independence Day. Thankfully, most of my neighbors are older, so it's not too bad, but we do hear the fireworks all night for days on end.

    2. I know, it's boiled for hours, right? The thing is we don't have condensed milk here, even the regular milk is too pricey. Good thing I'm allergic to it :)

    3. Yep, boiled to a caramel consistency. Milk isn't overly expensive here unless you want non dairy milk. Thankfully, we have an Aldi discount store close by and can get almond milk $2 for 1/2 gallon and $2.50 for the chocolate version. That's still pricey, but it runs $3.50 or more everywhere else when it's not on sale.

  19. Oh, that looks delicious. I make a low carb raspberry cheesecake. There are crushed nuts on the bottom and raspberry for the topping. It is no bake.
