Dilled Shrimp Gratin

Every now and again I'll be a nice wife and cook Jason something that he wants. Mind you, it isn't often since I don't want him to get too spoiled. Since I started my vegetarian diet a few months back, I've been feeling a little bad since I've kind of sucked him into it with me at dinnertime. Not that he's complaining (too much), but he is a meat and potatoes guy, so I know dinner just isn't something he looks forward to much anymore. 

Earlier this week I decided to add a little surprise to our meal plan and made a Dilled Shrimp Gratin dish that I found from Golden Blossom Honey. Jason got a little meat for dinner, and it was easy enough to pick out my portion and scoop onto his plate. Which, he more than happily accepted.


Dilled Shrimp Gratin


I really enjoyed mixing the sauce into my plain rice. Mixed with the cheeses and tomatoes, it added a nice punch of flavor to an otherwise boring food. 

Ingredients
1 Tablespoon olive oil
2 Tablespoons onion, minced
1 garlic clove, minced
1 pound shrimp, cleaned and deveined
2 tomatoes, seeded and diced
4 ounces feta cheese, crumbled
1 teaspoon GOLDEN BLOSSOM HONEY
2 eggs
1 teaspoon dried dill
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup half and half
3 Tablespoons Parmesan cheese

  1. I love me cauliflower gratin! You just cook one big cauliflower (separated into flowers), put it into your casserole dish and pour a cup of sour cream mixed with an egg or two over it and bake it. It is nom nom nom....

    1. I like that too, Dezzy. I'll add a layer of cheese over it sometimes as well. Not a healthy way to cook the cauliflower, but it sure is good!

    2. do you bread it and fry it sometimes too? That is nice for dindins too, especially now that you're a vegetarian

    3. I try to stay away from fried foods when possible since they don't agree with my tummy. Occasionally, I will do stir fry, but try to stick with oven-baked foods.

  10. This does look great! I love shrimp!

    I just made a potato soup. We have a bucket of home grown potatoes downstairs. I did something odd - I put chopped cabbage into it. We grew that too. There's a lot of it! It actually was good.

  18. Feta cheese is so flavorful. I just love it from time to time. This is a dish my two oldest boys would love to have when they come to visit mom. :)
