Lunchbox Favorite: Curried Fruit

In an effort to save money and eat a little healthier, Jason stopped dining out on his lunch breaks a few years back, opting to take healthier meals from home. Additionally, Mariah and Allison refuse to eat school food, so they pack their lunches every day, too. This year, Allison's school is offering free breakfast and lunch to all students, and I don't know if I find it funny or sad that they can't even give the food away free to entice the kids to eat it. I used to eat lunch with Allison, and I don't blame them for shunning school lunches. Simply put, they are disgusting

I try to keep the lunchboxes exciting for the family, always looking to surprise them with something new to keep things fresh throughout the year. When I came across this Curried Fruit recipe on Golden Blossom Honey, I thought it would be a fun lunchbox addition


This fruit cocktail is a real tropical treasure. Not only is it a new lunchbox favorite, I like to have it as a light breakfast or after dinner dessert. You can eat it warm or cold, either way is scrumptious!

Ingredients
1 (20 ounce) can peaches, drained
1 (20 ounce) can Royal Ann cherries, drained
1 (20 ounce) can pineapple chunks, drained
2 (11 ounce) cans Mandarin oranges, drained
1/3 cup GOLDEN BLOSSOM HONEY
1/2 teaspoon curry powder
juice of 1 lemon
2 Tablespoons butter or margarine

  2. Boo on the canned things :) I shall come over there and burn your stashes of cans :) We never had kitchens and lunches at school so I wouldn't really know what was my lunchbox fave LOL I'd take a sammich with me, usually, since our school starts at 7.30am.

    1. Our lunchboxes are nowhere near as crafty as yours! Mariah even switched over to the brown paper bag so she doesn't have to tote around her lunch kit to class after eating. So, we use a mixture of plastic baggies and a few reusable containers she can just tuck into her backpack after lunch.
