The Deliciousness of Homemade Pumpkin Streusel Bread

Pumpkin, pumpkin everywhere! I think you're either a person who jumps on the pumpkin flavored everything bandwagon each fall, or you're not. I definitely AM a pumpkin girl, and will try to find any excuse to use it in my recipes over the next few months. I found this Pumpkin Streusel Bread on Golden Blossom Honey not too long ago, and immediately knew I was going to get myself into trouble with this recipe! It was one of those "take the FitBit off and stop keeping track of your food intake" kind of days because I knew I was totally going to blow it with how scrumptious the bread turned out.


The bread baked up so sweet, moist and delicious, I really couldn't stop with just one piece! Let's just say, the loaf didn't last too long around here! While the recipe is perfect as is, I think it would also be amazing with the addition of some chopped walnuts mixed into the bread batter, which I'll use the next time I make this recipe.

Ingredients
Topping:
1/4 cup pecans, chopped
2 tablespoons brown sugar
1 1/2 tablespoons butter, cut into small pieces
1/4 teaspoon cinnamon

Cake:
2 cups flour
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1/2 cup raisins
1 cup pure pumpkin puree, not pumpkin pie mix
1/2 cup plain low-fat yogurt
1/2 cup GOLDEN BLOSSOM HONEY
1/2 cup sugar
1/4 cup vegetable oil
1 teaspoon vanilla
2 eggs

  2. I love pumpkin anything to! My husband doesn't like pumpkin in drinks, but he does like pumpkin in bread(y) foods. I should make some.

  4. Looks nom nom especially the topping! And those lil' pumpkins are too cute!
    I tend not to like it in sweet recipes, but maybe I just never tried a good one :) I mostly put pumpkin in cream soup with some chard or garlic, or I just dice it and roast it with some potatoes.

    1. I don't like pumpkin on its own, but when mixed with pumpkin pie spices, it's my favorite. I think it does so good in baked products like breads and rolls because it gives it an added boost of moisture.

  14. I like pumpkin and I love that it represents the fall, but no, I don't jump on the bandwagon. I'm sure pumpkin bread will go over well in the fall here though. Especially for breakfast.
