One of my favorite childhood memories is visiting my grandmother’s farm in Tennessee. She would delegate small tasks that my sister and I could do, like gather eggs from the coop, snap the green beans, or help her in the garden. I remember always being fascinated with all the beautiful tomatoes that she grew, and loved it when she would let me keep some for myself after a hard day of work. I would eat them just like many do apples, and they were so refreshing to snack on under the hot sun. Those were the days great memories were made.
There’s nothing like fresh tomatoes. To this day, tomatoes are one of my favorite foods, and I love that my girls often chose to snack on them over other foods as well. The one thing that has always irritated me about my home is that we live in a shady area, there really isn’t enough sun to get a garden started. It would be great if my girls could get their hands dirty in the garden the way I used to do with grandma, then enjoy the fruits of their labor with some garden fresh tomatoes. We are huge pasta eaters in my house, and on busy nights I like to whip up a family favorite recipe that can be finished in under 30 minutes. What’s great about this recipe is it can be used as a base to build upon. We add or remove ingredients depending on family requests. Add in sautéed green peppers or onions, or make it a vegetarian dish by removing the meat.
Pasta Meat Bowl
1 lb dry elbow macaroni
1 46 oz can Dei Fratelli Tomato Juice
1 28 oz can Dei Fratelli Diced Tomatoes (you can substitute for stewed if you like)
1 lb ground beef
shredded cheddar cheese for topping
salt and pepper to taste
Brown ground beef and drain.
In a large pot, bring tomato juice and elbow macaroni to a boil. Reduce heat and simmer until pasta is al dente.
Add in diced tomatoes and ground beef. Heat through.
Season with salt and pepper.
Top with cheddar cheese.
