Blueberry Muffins

I hate to admit it, but almost every time I make blueberry muffins, they come from a box. I don’t know why, because from scratch always tastes better! I have been using this blueberry muffin recipe from AllRecipes for a few years now, and have yet to find one that tops it. They call it "To Die For Blueberry Muffins" which is perfectly named because these muffins are killer! So good, you'll want to make a double batch!



Ingredients

1 1/2 cups all-purpose flour
3/4 cup white sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil
1 egg
1/3 cup milk
1 cup fresh blueberries
1/2 cup white sugar
1/3 cup all-purpose flour
1/4 cup butter, cubed
1 1/2 teaspoons ground cinnamon


Preheat oven to 400 degrees F (200 degrees C). Grease muffin cups or line with muffin liners.

Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder. Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup.

Mix this with flour mixture. Fold in blueberries. Fill muffin cups right to the top, and sprinkle with crumb topping mixture.

To Make Crumb Topping: Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon. Mix with fork, and sprinkle over muffins before baking.
Bake for 20 to 25 minutes in the preheated oven, or until done.

  1. I love blueberry muffins too! MMMMmm. I currently use Martha Stewart's recipe (that you dip the top in sugar...mmm) and they're delicious...but this sounds yummy too! I'll have to try it out, I love trying different variations :)

    1. I don't normally follow Martha's recipes cause she tends to use a bunch of ingredients I have never heard or or can't find at the store. I'll have to look for her muffin recipe though! We make the crumb topping for these too, but they just don't bake pretty, so I couldn't get a good picture of them.

  2. This looks like just the thing I need! I made brown sugar muffins for my children, once I tried adding blueberries and it did NOT come out okay; the children have a thing against mixing foods... I even tried it with chocolate chips and it didn't get good reviews. I don't often eat muffins, but when I do, this kind is my favorite! Thank you for sharing the recipe!

    1. My kids are picky like that too! Mixing foods do not work for them, but they will go for anything with chocolate chips mixed in. Go figure ;)

  3. Mmm we love blueberry muffins in our house. I like to add a little flax seed to make them a little healthier. Could easily add it to this recipe too!

  7. Homemade blueberry muffins are the BEST! I have a recipe I always use each time. Normally every year we pick blueberries but haven't done so yet. I always pick too many anyways lol.
